Protein Cupcakes

HAPPY FRIDAY!
Being fussy with food makes eating healthily 100 times harder, because there are so many things that we don't like. It sounds silly but even a texture or smell of a certain food would put me off immediately! I hope if you are fussy like me you will get some inspo from these recipes!
So I am trying to find new dishes/snacks that are healthy and actually edible! My first recipe was inspired by another blogger, Niamh O Sullivan from Cinnamon Soul (Cinnamon-soul.com), she has some great recipes/posts on her blog, she is also a health and fitness blogger. I used more or less the same ingredients, what I liked most about this recipe is that the ingredients were healthy but also not overly expensive or hard to come by. I am also a huge fan of Roz Purcell's blog, Natural Born Feeder but some of the ingredients she uses are expensive and can only really be bought in a health food shop.
PROTEIN CUPCAKES:
INGREDIENTS- 30g of coconut flour
- 50g of ground almonds
- 100g of natural glenisk greek yoghurt
- 2tbsp of cocnut oil (melted)
- 30g of vanilla whey protein
- 1 1/2 tsp of baking powder
- 4 tbsp of honey
- a bag of chocolate chips
METHOD:
- Preheat the oven to 180 degrees
- Place cupcake cases into bun tray
- Melt the coconut oil in a saucepan and set aside to cool (make sure it doesn't harden)
- Add all of the ingredients into a mixing bowl-except the chocolate chips and mix together
- When all of the ingredients are combined, add the chocolate chips
- Spoon the mixture into each of the bun cases to about halfway
- Bake for about 20-25 mins (mine were done after 20 mins)
- Set aside to cool
- Serve and ENJOY!
TIPS:
- If you are not a huge fan of coconut, decrease the amount of coconut oil used to 1 - 1 1/2 tbsp. My sister isn't a fan of coconut and figured that the coconut flavor was too much for her.
- Yes I use a lot of chocolate chips, the reason being, the batter is actually extremely wet, its almost like liquid. So when the cupcakes are put into the oven the choco chips actually sink to the bottom of the bun case because they are so heavy. Which creates a lovely chocolate layer at the end of the cupcake- if you don't want this just use half a bag of choco chips.
- Like I said, don't worry if the mixture seems extremely thin the cupcakes will rise!
